No bake cocoa brownies

Guilt free brownies with better flavor of chocolate.


95 gms walnuts
26 gm milk powder
50 gm cocoa
1/4 tsp pure vanilla extract
1 tbsp hemp seeds
1 tbsp desi ghee (clarified butter)
160 gm (12) medjool dates, pits removed
40 gm walnut, chopped


This recipe is an adaptation of a vegan brownies from Galloways ( specialty food store)

Line a square pan (8"x8") with aluminum foil with extra hanging off the sides so you can lift it out when the brownies are done.
Process walnuts in food processor until fine and crumbly.
Add the remaining ingredients except the dates and process for 30 seconds.
Now add the dates a couple at a time until mixture begins to look like a potting soil.
(The recipe says it sticks but my mixture does not look sticky at all.)
Scrape down the sides a few times to ensure that everything is mixing evenly. Remove blade from the jar and add chopped walnuts; stir with spatula.

Transfer mixture to the prepared pan, distribute evenly and pat firmly into the pan with your clean hands. Place the brownies in fridge to set for 1 hour. Cut into squares and serve!
