Ingredients:
2 cups Basmati rice
2 tbsp dessicated coconut
4 tbsp milk (any type will do)
100g cashew nuts
3 tbsp lemon juice (or as preferred)
2 sprigs curry leaves
1 tsp mustard seeds
1 1/2 tsp turmeric powder
2 tbsp ghee/butter
water and salt as needed

Preparation:
Add washed rice, water (about 3 cups), dessicated coconut, milk, turmeric powder and salt to taste into the rice cooker pot.
Give a good stir and let the rice be cooked.
Once the rice is done, heat ghee and fry the cashew nuts.
As soon as the nuts becomes brown and crunchy, add the rest of the ingredients and stir very quickly.
Pour these over the cooked rice and stir gently to combine in.
Let it sit for about 10 mins before serving.
