Curried tamarind ladies fingers

Ingredients:

180g ladies fingers (bendi) - cut into 1 inch length
1 medium size onion - sliced thinly
3 cloves garlic - sliced thinly
1 tsp mustard seeds
1 tbsp meat curry powder
1 tsp saffron/kunyit powder
1 1/2 tbsp thick tamarind/Assam juice
2 sprigs curry leaves
enough oil
salt to taste
  Preparation:

Heat up enough oil and deep fry the ladies fingers. Remove and keep aside.
Just leave about 2 tbsp of oil in the same pan. Saute the garlic and onions to soften, then add mustard seeds, curry leaves and curry and saffron powder.
Keep frying till all the ingredients blends into each other.
Put in the tamarind juice, ladies fingers and salt to taste.
Continue stirring until it becomes dry and thick before removing from heat.
