Ingredients:
This is my "quick" bread recipe that I go to when I realize I don't have any bread to go with dinner, a must in our house. It will be done and on your table, start to finish, in less than an hour, I promise!
Dough Ingredients:
(This recipe makes 2 Focaccia)
4 1/4 cups flour
2 teaspoons salt
2 1/2 teaspoons yeast
1 1/2 cups warm water (Replace 1/2 cup with white wine and it will rise and taste even better!)
3 tablespoons olive oil
Topping Ingredients:
olive oil
oregano
kosher salt
Parmesan Cheese

Preparation:
Set oven to 550 and place a stone on the second the last rack OR Heat oven to 550 and spread some corn meal on a cookie sheet and set aside.
This recipe is for a Food Processor:
Mix dry ingredients of dough and pulse for a few seconds.
Add liquid an a slow steady stream until it forms a ball.
Once the ball forms: knead in the processor for 1 minute.
cover and rise or 20 minutes.
Separate into 2 balls.
Spread them out on to paddle dusted with corn meal or straight on the cornmeal dusted cookie sheet. Rub olive oil on your hands and spread the ball out using the Dimple Method.
Allow it to rest for 10 more minutes.
Brush more olive oil on.
Rub the oregano between your fingers dusting it all over, this was one of my first cooking lessons ever! My Daddy taught me how to rub it to release the oils and I thought I was so grown up and sophisticated : ) See Photo: This is my Dad and me around the time I started cooking with him.
Add salt to taste.
Slide onto stone or place sheet in oven and cook for 7-10 minutes, it will be golden brown..
As soon as you remove it spread Parmesan Cheese all over and drizzle on more olive oil.
Cut and eat like a pizza.
