Potato and Sausage Breakfast Casserole
Made this for dinner and it was delicious. We had leftovers and ended eating it for breakfast the next day. It was just as good heated up in the microwave as it was when I made it the night before. Ingredients: 1 T. olive oil1 small onion, diced 4 large potatoes, skin on, diced into small cubes 1 pound bulk turkey sausage, cooked (I used maple sausage) Salt and pepper, to taste 5 eggs 1 1/2 c. 2% milk 1 t. cumin 1/2 t. garlic powder 1 c. shredded cheddar cheese Directions: 1. Heat olive oil in a large skillet. Add the onion and potatoes. Cook for about 10-15 minutes, until potatoes are just fork tender. Stir in the sausage, season to taste with salt and pepper and cook an additional 5 minutes, until browned. 2. Cool the potato and sausage mixture and pour into a lightly greased 13×9 casserole dish. 3. Combine the eggs, milk, cumin and garlic powder in a bowl and whisk together. Pour into casserole dish and top with shredded cheese. Bake immediately at 375 degrees for 35-40 minutes, until egg is fully cooked. 4. Cool for 5 minutes before slicing and serving.
