Combine dry yeast and warm milk and leave to rest for 10 minutes at room temperature.
Put flour in the kneading machine. Add sugar and salt and cover with some flour with a wooden spoon. Add eggs and the milk + yeast mix.
Knead until you have a non sticky dough (for about 5 minutes at speed 3). Add softened butter gradually while kneading. Knead for 5 minutes at speed 3 again, until you have a non sticky dough.
Form a ball and cover with a cloth. Leave to swell for 2 hours at room temperature.
Degas the dough and divide it into 7 dough (about 4.9 oz each). Form little balls and cover with a cloth for 15 minutes at room temperature.
Melt the butter. Spread the mini doughs. Brush the dough with some melted butter and sprinkle some brown sugar on top (about 1 tsp per dough).
Roll the dough.
Fold the roll top-down.
Cut the dough top-down, leaving a border in the bottom (watch the video).
Fold the left side to the left and the right side to the right. Put all the heart shaped doughs on a parchment paper on a baking tray. Cover with a cloth and leave to swell for 1 hour at room temperature.
Preheat your oven at 1350°F. Combine a egg yolk with a tablespoon milk and brush the brioches with this mix. Sprinkle some pink pralines on top.
Bake the brioches for 17 minutes at 350°F.
