BBQ Seitan Burgers..

Tonight I felt like burgers, but I deviated from my favourite White Bean and Sage Patties or Bean based burgers and decided to try something with seitan. A little bit of googling lead me to this, which was a great start but I didn't have any mushrooms and forgot to pick some up while I was out so I modified it a little. They're fantastic on burgers, I'm not sure if I'd just eat one alone, but even K said it was yummy on her burger. I'm not sure if you need that much cornmeal. Mine were kind of mushy so I just kept adding it before I decided to fix it with a bit of gluten flour. Feel free to add the gluten flour first and then as much cornmeal as you need to form a stiff burger pattie.

Barbequed Seitan Burgers

1/4 cup Whole Wheat Flour
1/8 cup Fine Yellow Maize Meal (I'd leave this out next time I think)
1/2 cup Instant Polenta
2 Tbsp Gluten Flour (Vital Wheat Gluten)

170g Seitan (I used a beef style one based on Bryanna's Beefy Style Seitan)
1/2 Tbsp Olive Oil
1/4 cup finely chopped Onion
1/2 cup finely chopped Green Capsicum
1 tsp minced Garlic (or I clove, crushed)
1/4 tsp Salt
1/8 tsp dried Oregano
1/8 tsp dried Thyme
1/8 tsp Celery Seed
1/8 tsp Mustard Powder
1/2 tsp Smoked Paprika

1/4 cup Smokey BBQ Sauce

Chop your seitan and then pulse in a food processor until it looks like coarse mince. Set aside.

Heat oil in a non stick frying pan over medium heat. Add the onion and cook for about 5 minutes or until softened. Add the garlic, capsicum, salt, oregano, thyme, celery seed, mustard powder and smoked paprika. Cook for a further 5 minutes or until soft. Transfer to a bowl with the seitan.

Add the flours, wheat gluten and bbq sauce to the bowl and mix well. Knead with your hands once it gets too thick to stir. (Alternatively, mix it first without the wheat gluten then add the gluten and knead).

Using 1/3 of a cup of the mixture for each pattie, form the mix into burgers and fry in a non stick pan for about 4 minutes per side or until heated through and browned on the outside. Serve on a roll with all the fixings :D
