Choc fudge (with coconut topping)

1 1/4 cup margarine (melted)
1 cup brown sugar
2 eggs (whisk lightly)
1 1/2 cup cake flour
1 tsp vanilla essence
1 1/2 Hershey's semi-sweet chocolate chips
3 tbsp desiccated coconut.
When margarine is still warm, add in the brown sugar and mix.
Fold in the flour.
Add eggs litle by little and continue to fold.
Pour into a pot, add the chips and cook over low heat.
Keep stirring until the mixer becomes really thick.
Remove from heat, beat with a wooden spatula continously or 5 mins.
Pour into a baking tray.
Spinkle the coconut on top and press on to the fudge.
Let it harden before cutting in shapes of your choice.
