Ingredients:
Ok, it's 2010 and we all trying to eat a little healthier. Now I know healthy and ice cream don't exactly go together but it can. Somebody's been holding out on us and not saying the first step to this healthy dessert is a piece of fruit!! This recipe allows you to do whatever you like and that why I love it. My daughter came up with this and when she said I didn't need a ice cream maker I jumped on board!!! I had came across this before but this is her creation. By now you all know me and well lets just say if you want it healthy make my daughter's version but I had to make it bad as usual lol!!! Let me not forget how good it is!! If I didn't tell you it was fruit you wouldn't know!! And for all the vegans this is pefect for you too!!
BEFORE WE START TIPS:
* The bananas must be frozen at least 24 hours.
* I suggest using a food processor but if using a blender add about 1/4 to 1/2 cup liquid or you'll have some trouble.
* Please Do Not puree bananas before freezing they will brown faster.
* To sweeten this without adding any sugar use over ripened bananas.
INGREDIENTS:
4 frozen bananas(do 2 per person)
8 cherries(maraschino in the jar or fresh)
2 TBSP-almonds
1 TBSP-sugar or honey(optional)
1/2 tsp-almond extract(optional)
1/2 tsp-vanilla extract(optional)
1/2 cup whipped cream(optional)

Preparation:
The good version....
1. In a food processor or blender puree bananas and sugar if using until mixture is starting to become smooth but still very chunky.
2. Add almonds blender until everything is completely smooth.
3. Add cherries puree about 2 more times and place in a bowl.
AT THIS POINT YOU CAN EAT AS IS OR WRAP IN PLASTIC WRAP AND FREEZE ABOUT 30 MINUTES THEN EAT.
The bad version......
4. Do steps 1 and 2 like above.
5. Add cherries, almond extract, and vanilla extract blend about 2 more times.
6. Place mixture in a bowl, fold in whipped cream.
7. Wrap with plastic wrap freeze about 30 minute and eat.
8. You can top with more whipped cream,cherries, and almonds when serving.
TIPS:
* Bananas are the only fruit that can be ice cream on their own because of the fat content, this fat is good for us. With any other fruit you will need the whipped cream.
* Just like any other ice cream this gets hard just pop it in the mircowave for 10-20 seconds.
* Puree other frozen fruits to make a quick sorbet or add milk to them for a sherbet.
* This recipe is just a method use you imagination and make up your own creations!!
