Dried Shrimp and Egg plant curry / Endu royyalu Vankaya kura

This is my moms favorite recipe. When we were coming back from home she packed me some of the dried shrimp. They are precleaned, prepacked and ready to go. All i have to do is take them out of the fridge and cook them. Its ready.......

Preparation time = 20 mins
Serves = 4
Calories = Approx 200/ Serving

INGREDIENTS-
1/2 Lb Egg plants
1 Cup Dried shrimp
1 Onion (Chopped)
4-6 Hot peppers (Sliced)
1 Tsp Cumin seeds
1 Tsp Mustard seeds
1 Tsp Garam masala
1 Tbsp Ginger garlic paste
1/4 Tsp Turmeric
2 Tbsp Oil
1/2 Cup Cilantro (Chopped)
Salt to taste (1 tsp)

PREPARATION-
1. Clean and cut the egg plant into 1 inch thick pieces and soak them in salt water till they are ready to be used. This prevents the oxidation process and helps them to maintain their beautiful color. Soak the dried shrimp in some hot water and set aside.
2. Heat oil in a pan. Add mustard, cumin and allow to splutter. Now add the chopped onion, ginger garlic paste, turmeric, hot peppers and saute till onions are tender.
3. Now squeeze the egg plant to remove excess oil and add them to the sauteed onion. Squeeze the dried shrimp and mix well. Cover and cook till both the egg plant and shrimp are cooked.
4. Finally add the salt, red chilli powder, garam masala and cook for 2 more mins.
5. Turn off the flame and stir in the cilantro.

Endu royyalu vankaya kura / Dried shrimp and egg plant curry
Serve with warm rice or roti. Its simply heavenly!!!!!
