Easy Spicy Hummus and Multi-grain Flatbread
Here’s a yummy and simple appetizer, or something that can even be served as part of a meal. This flatbread is great, because there’s no butter, oil or salt. Experimenting with different types of flour for this recipe can also make this flatbread great for people with different dietary needs. Easy Spicy Hummus and Multi-grain Flatbread Hummus Ingredients: 1 can chick peas 4 cloves minced garlic 3 tbsp each fresh lemon juice and water 1 tbsp ev olive oil 1/2 tsp cayenne pepper 1/2 tsp hot sauce (any flavour you like!) 1/2 tsp ground cumin Method: Drain chick peas in a strainer, and rinse. Peel and crush garlic. Add all ingredients into blender or food processor, and blend until ingredients are a fine paste. (If using a blender, you should start with half a can of chick peas, and gradually add the remaining contents of the can as blenders don’t have as much power as a food processor. If you have a setting to make either baby food or sauce on your blender, use this setting, pulsing until all ingredients are mixed together. Then you can continue to blend constantly for about 15 seconds.) Multi-grain Flatbread Ingredients: 1-1/2 cups 12 grain flour 1/2 cup unbleached flour 1 tbsp baking powder water Method: In a bowl, sift together the flour and baking powder, ensuring both are mixed together well. Add in water at 1/4 cup intervals, stirring between each addition of water. Note: you want the dough to be somewhat crumbly when stirring. After adding 1/2 cup, start to knead the dough with floured hands in the bowl to test out the consistency. The dough should have a smooth elastic feeling, while not being too sticky. If the dough feels to dry after 1/2 cup of water, add 1 tbsp of water at a time (stirring between each addition) until it feels more like a smooth dough. If the dough is too sticky, add more flour at 1 tbsp at a time. Lightly flour either the counter or cutting board, flour your hands, and roll the dough out onto the floured surface. Knead the dough for about 5 minutes. You don’t want to over-knead this dough, because there is no yeast involved. The dough should just be smooth (not sticky!) and slightly elastic. Break off pieces of dough, roll into balls, and flatten into 1/4 inch thick patties. (Make the balls as big or as small as you want the flatbread to be. I made mini flatbread. Over medium head on a dry skillet/frying pan, cook the dough patties for about 5-10 minutes on each side. (Time depends on your stove. After 5 minutes, check to make sure they are not burnt. If they are turning golden brown on one side, it is time to flip them over. The dough will get slightly puffed when it is cooked.) Serve with hummus, or any other dip, and enjoy! Optional: For a sweeter flatbread, before adding water, add: 1-2 tbsp brown sugar, 1 tbsp cinnamon, 1 tsp nutmeg, 1 tbsp cocoa powder, 1/4 cup crushed sliced almonds, and even some raisins. (You may need to increase the amount of water if doing this.) Serve these sweet flatbread with peanut butter, any other nut butter, apple butter, nutella, or any other type of sweet spread.
