Ingredients:
3 cups cooked white rice
160g minced lamb
1 large (abt 200g) potatoes remove skin, cubed and deep fried
1 (abt 80g) red capsicum - diced
8 shallots - sliced
1 tbsp chilly flakes (or as per taste)
1 tsp blended/grounded ginger
1/2 tsp blended/grounded garlic
1 bunch coriander leaves - sliced
2 tbsp canola oil
salt to taste

Preparation:
Mix the ginger and garlic into the lamb and keep aside.
When oil is heated, saute the shallots to soften.
Add in the lamb, fry and break with a spatula to prevent it from lumping up.
Once the lamb becomes dark brown in color and looks crunchy, add rice, salt and chilly flakes.
Stir to combine all in. Next goes in the capsicum, fried potatoes and coriander leaves.
Give a good stir before removing from heat.
