- In one frying pan add a little olive oil and start to fry the red peppers on a high heat, until soft. They do spit quite a bit so it best to cover them with a lid.
- In the same pan or another depending, on the size, add the oyster mushrooms and fry quickly until browned on both sides.
- In another pan add the haloumi and dry fry on both sides until brown.
- To serve, place the peppers on two plates, pile with the haloumi and then the oyster mushrooms on top.
- Season with salt and pepper and drizzle over some olive oil or balsamic vinegar.
- Serve with crusty bread.
