Ingredients:
Long grained fine rice (uncooked) - 2 cups.
Oil - 3 tbsp.
Garlic - 2 cloves (crushed).
Salt to taste.
Onion - 1 big (chopped).
Vegetable stock - 4 cups.
Red or Green Bell Pepper - 1 (cut into strips).
Carrot - 1 grated.
Corn niblets - ½ cup.

Preparation:
Tanzanian Vegetable Rice is an African delicacy and also popular in many countries around the world. Here is the recipe -
Wash the rice and soak in water for 10 minutes. Then drain all the excess water. Heat oil in a fry pan and fry onion, garlic. Mix in the rice and stir fry 3-4 minutes. Add the vegetable stock and cook the rice on a low flame after covering the lid till half done. Then mix in the salt and the corn and the green pepper. Cook another 2-3 minutes and then mix carrots and cook till all the water is evaporated. Serve hot.
