Ingredients:
1 cup Cucumber Skins
2 cups Spinach
1 Chopped Red Onion
1 tsp. Minced Garlic
Salt and Pepper to taste
1 tbsp Butter

Preparation:
Peel cucumber using a julienne peeler. Chop onion. Melt butter in a sauce pan. Add garlic and onion and let saute for a minute. Add cucmber and spinach. Saute until cooked (spinach is mushy).
