Spiced Pumpkin Waffles

We have a new toy!  I finally got a waffle maker!

I was married about 14 years ago.  I remember registering for gifts and didn't have any clue what to ask for. I do remember registering for a waffle maker. I had never had one and thought it would have been fun. I think that was the only thing that I really wanted. 

I didn't get one.  I never bought one. For some reason they seemed indulgent to me. It seemed like a want and not a need so we just never did.  Plus my kitchen is tiny and there just isn't room for any more gadgets.

Well, now I have 3 kids and pancakes and frozen waffles are their favorite.  So we finally bought one. I'm still looking for the perfect spot to PUT it, but meanwhile, it's here and being used quite often. 

My oldest son is loving to cook and he loves coming up with new things to put in waffles.  He loves pumpkin so we did pumpkin waffles.  It took us awhile to get the cooking time just right but once we did, they turned out perfect and delicious!

Spiced Pumpkin Waffles Recipe

1 1/2 cup all purpose flour

3 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1 tsp. nutmeg

1 tsp. ground ginger

1/4 tsp. salt

2 eggs

1/4 cup packed brown sugar

1 cup canned pumpkin puree

1 2/3 cups milk

4 tbsp. butter, melted

Mix dry ingredients in a bowl.  Mix wet ingredients in another bowl.  Fold the wet into the dry ingredients, mix to combine.  Cook according to your waffle iron directions. We found these to cook for at least a minute or 2 longer than other waffles. 

Total calories = 1955 calories

6 waffles = 326 calories per waffle

This will vary depending on the size of your waffle maker. We got about 6 out of our belgian waffle maker.
