Step 1: Clean scallops & shells thoroughly to remove dirt & dry well.
Step 2: Preheat oven at 220 C.
Step 3: Remove mentaiko from its sac by using a spoon to scrap it out.
Step 4: Mix mentaiko with mayo, lemon juice.
Step 5: Spread them on scallops & top with cheese.
Step 6: Bake for about 10 mins or till golden brown. Serve hot!
