Ingredients:
1 medium-sized onion - diced
3 cloves garlic - minced
1-1/2-inch knob ginger - minced
Pinch of turmeric
5 medium carrots - chopped into 1/2-inch chunks
1/2 tsp ground cumin
3/4 cup water
1 cup milk (I used 2%)
Salt & pepper - as needed

Preparation:
1. In a pot, sauté onions until they turn translucent, then add in garlic, ginger, and turmeric and continue to sauté for a couple of mins.
2. Add in the carrots, mix well, and let the carrots sweat for about 5 mins. Season with salt & pepper. Then, add in water and bring to a rolling boil for about 10 mins.
3. Transfer contents into a blender and once sufficiently cooled, blend into a smooth purée.
4. Return the carrot purée to the pot, add milk, and heat until it starts to simmer. Turn heat off and serve immediately.
