Preheat your oven to 350°F (180°C). Cut the bananas into slices and then mash them with a fork.
Add almond milk, baking powder, baking soda, olive oil, and cider vinegar, then mix.
Gradually add rice flour and mix until well combined.
Pour the batter into a mold.
Slice 1/2 banana (or cut a banana in half lengthwise) and place it on top. Bake for 45 minutes at 350°F (180°C).
There you go! Your banana bread is ready!
Observations
You can add 1 tsp of cinnamon or nutmeg to your batter. Feel free to add chocolate chips or blueberries to make the result even more delicious :-)
