When I saw this on the Martha Stewart website I just had to have a go. It looked so easy and I knew that using vegetable oil and vinegar would result in a nice moist cake. I have combined it with buttercream icing but there are lots of icing recipes that would suit these cupcakes. Use your favourite.
Cake
Ingredients:
1 1/2 cups plain flour
3/4 cup caster sugar
1/2 cup cocoa powder
1 tsp bicarb soda
1/2 tsp salt
5 tbsp canola oil
1 tbsp white vinegar
1 tsp vanilla extract
1 1/4 cups water

Preparation:
* Preheat oven to 160c fan forced and line a muffin tray with paper cases
* Whisk together flour, sugar, cocoa powder, bicarb soda and salt. Set aside
* With an electric mixer, mix together oil, vinegar, vanilla and water. When well combined, add flour mixture to the bowl and mix until smooth. This is a watery batter. Make sure you have scraped the sides of the bowl and mixed again so it doesn't have lumps.
* Spoon or pour batter into muffin tins. Fill until between 1/2 and 3/4 full.
* Bake for 20 minutes and immediately remove cakes from tin onto a wire rack.
* Let cool completely before icing
