Pineapple banana bread recipe


* 3 Cups all-purpose flour
* 2 Cups sugar
* 1 tablespoon salt
* 3 eggs
* 1-1/4 Cups vegetable oil
* 2 tablespoons vanilla extract
* 1 tablespoon baking soda
* 1 tablespoon ground cinnamon
* 1 can (8oz) crushed pineapple, drained
* 2 Cups (4 to 5 medium) mashed ripe bananas


Step 1:

In a large bowl, combine the flour, sugar, salt, baking soda, and cinnamon.

Step 2:

In another bowl, beat the eggs, oil and vanilla; add pineapple and bananas.

Step 3:

Stir into the dry ingredients just until moistened. Pour into two greased 8-in. x 4-in. loaf pans.

Step 4:

Bake at 350 for 60-65 minutes or until golden brown and a toothpick remains clean when inserted into the center.

Step 5:

If you notice that the tops are starting to get browned, yet the tooth pick does not come clean, cover with a piece of foil and continue baking to prevent top and the sides from getting too dark.

Step 6:

Cool for 10 minutes before removing from pans to wire racks.
