Ingredients:
1 pork trotter (debone but do not split open)
1 bottle cooking wine
1 table spoon salt
1 roll of bandage
15 pce of cardamoms

Preparation:
fry the salt and the cardamoms untill the cardamoms crack open. Rub the fried ingredients onto the trotter. Keep in the freeze for 3 days.
On the 3rd day, remove from the freeze, rub off all the cardamoms from the trotter. Use the bandage to bandage up the whole trotter tightly. Place it in a deep container, pour the wine over to soak the trotter for 3 days in the freeze. On the 6th day, boil the trotter for 1/2 an hour or until the meat is tender. Let cool and place it back into the freeze for at least 4 hours.
Remove the bandage before slice the trotter into thin slices to be served cold.
