Combine minced chicken with ginger, garlic, pepper and salt.
Mix in and separate 4 portions.
Moisten your hands and grab one portion of the minced chicken.
Gently pat one portion of minced chicken onto a stalk of lemongrass, shaped into a kebab.
Do the same to the other portions of minced chicken and lemongrass.
Heat oil on a portable grill and when heated, grill the kebab all over to cook evenly.
Pour barbecue sauce on top of the kebab.
Roll the kebab pieces to coat with the sauce before removing from grill.
