- Chicken:
Heat olive oil in a saucepan and add the chicken thighs. Brown all sides. - Add the barbecue sauce to the chicken pieces and cover them with water. Cook for 30/35 minutes over medium heat. Stir occasionally.
- Once cooked, shred the chicken using a fork.
- Brown everything again in the pan for a few minutes.
- Bacon:
Arrange the bacon on a baking sheet with parchment paper then brush each slice with maple syrup. - Bake the bacon in an oven preheated to 390°F (200°C) for 12 minutes.
- Guacamole:
Mash the avocado with paprika, salt, pepper and a little lime juice. Mix well. - Bread:
Spread the bread slices with butter.
- Place the slices on a hot pan, butter side down.
- Sprinkle the two toasts with grated cheddar cheese over the entire surface. Toast the bread slices until the cheddar melts (be careful when cooking the toast, it must be golden).
- Spread one slice with guacamole, and the other slice with shredded chicken. Place two slices of bacon in the sandwich.
Close the grilled cheese and it's ready, you can enjoy!
Observations
How to make a vegetarian version?
You can replace the chicken with mushrooms and the bacon with vegetarian bacon, or remove it from the recipe.
