These are so addictive- we made them twice this month already!
This is made just like the Slow Cooker Italian Beef using the pressure cooker instead of the slow cooker. Here's how we do it:
Sprinkle a lean cut of beef like a rump roast liberally with your favorite garlic blend seasoning or 1/4 - 1/2 packet dry Italian salad dressing mix.
Place in pressure cooker and dump a jar of pepperoncini over the top.
Place lid on and bring up to pressure - high - then cook 30-60 minutes depending on size of your roast. You want it cooked through and fork tender and the times will vary, again depending on the size and your cooker.
If using for Italian Beef Sandwiches, place meat and pepperoncini* on cutting board and shred with 2 forks or chop like you do when you make pulled pork then return to the cooker and mix with the juices.
*For this recipe the pre-sliced pepperoncini worked beautifully- if you can find them, just leave them in the cooker with the juices and you only have to worry about shredding/chopping the meat.
