The perfect salad for an outside lunch or to bring to the office !

- Prepare the sauce :
Combine the mayonnaise with lime juice, crushed garlic clove, salt, pepper and Cayenne pepper. - Cut the red bell pepper and avocado into cubes. Chop the cilantro and red onion and crumble the cotija cheese (or feta cheese). Drain the corn and the kidney beans.
- Pour the sauce in the jar. Add the kidney beans on top, then the avocado. Pour about 1 Tbsp of lime juice on the avocado to avoid darkening.
- Add the cotija cheese (or feta cheese), then the corn and then the red onions. Add cilantro and then the red bell pepper. Finally, add the arugula on top and close the jar.
- There you are, ready for a lunch outside !
