Grilled cornish hens with herbs
This recipe is a gourmet quality grilling recipe, perfect for a family fourth of July gathering. This recipe is based on a recipe found in Gourmet magazine, July 2008.

- Preheat grill to medium temperature. Oil the grill rack.
In a small bowl, toss the chopped herbs, minced garlic, 2 tablespoon olive oil, salt and pepper. - Wash Cornish hens, and dry them well with paper towels. Cut in half lengthwise. Smother hens with herb and olive oil mixture.
- Grill hens, on medium heat, turning occasionally, until nice and brown, about 20 to25 minutes. When done, remove hens to the prepared platter, and let them rest for 10 minutes.

I cooked and liked, but it took longer to cook. i live is bogotá that is 13.000 feet hogh, so i don't know if thats the reason

The altitude might be a factor in the cooking time. I researched this on Google and there was no conversion factor that I could find. I suggest you use a meat thermometer to measure doneness. 165 - 170 degrees Fahrenheit is done for a chicken breast.
