Sweetened Rice Flour With Corn and Coconut Milk ( Maja Blanca)
The weather is very friendly with me because its been raining since yesterday afternoon. It continued the whole night and actually the rain just stopped maybe an hour ago. I love it when its raining, the weather is cool and it is so nice to spend a few more hours in bed. I love to watch the rain fall and I love to walk when its drizzling...to me rain is just oh so romantic. Well, this kind of weather brings back a lot of memories to me. Here in Singapore I appreciate rainy days so much unlike in the Philippines because rainy days in the Philippines means flood, typhoon and a lot more. I miss Filipino food especially in this kind of weather. I am craving so much. My craving has tempted me to make Maja Blanca. It is a Filipino native food made of rice flour, corn starch, sweet corn kernel, sugar and lots of coconut milk. I have tried to cook it in the past several times already ( about 6 times ) but I always messed up and I have given up. I could not exactly figure out my mistake because I followed the recipe in strict details. Ingredients: 1 cup thick coconut milk 1 cup rice flour 1 cup sugar 1/2 cup cornstarch 5 tbsp sweet corn kernel 4 cups coconut milk In a pan, put 1 cup thick coconut milk and let it simmer until the oil separates from crumbs or latik. Once you see the oil separates and crumbs has started to form, stir it from time to time. Wait for the crumbs to become golden brown and crunchy. Turn off the heat. Use the strainer to get the crumbs and to take out the extra oil, Set aside. Now we have latik or self made coconut crumbs. We need it for garnish later Prepare a pan, rub it with coconut oil. Use the coconut oil you extracted from making latik. Set aside. In a medium saucepan, whisk together the ff: rice flour, sugar, corn starch , sweet corn kernel, coconut milk. Cook in a medium heat. Stir from time to time until you get your desired consistency. Transfer the now thick mixture into the prepared pan. Smoothen up. Cool slightly and garnish with coconut crumbs or latik on top. Wait for some time or put in the fridge for 15 to 20 minutes. Cut into squares and serve. Now,look at that..I almost gave up.Good thing my craving occurred once again and I was able to make a better outcome this time. I heard there are people like me who also failed several times in cooking Maja Blanca so they gave up.
