Dinner With Ready To Eat Organic Baked Tofu

Yesterday was really busy and on busy days it’s good to have Trader Joe’s organic ready-to-eat baked tofu in your fridge.  In my opinion it’s better tasting than meat and it must be good because my husband (Michael) eats it  ;-)   He used to cringe at the sound of the word “tofu” — he comes from a meat-eaten family where tofu is not part of their vocabulary.


Each package contains two large pieces of tofu that can be used in many different ways:






cut it up in cubes and add it to soups, salads and pasta
slice it up for sandwiches, burgers, and wraps
serve it “as is” like a piece of meat on your plate (what we did last night) — you won’t be disappointed



The tofu is very filling.  Each piece contains 16 grams of protein (the protein equivalent of a little more than 2 ounces of meat), and 3 grams of fiber.  It is also a good source of iron and calcium.


Michael and I decided to start our dreaded taxes yesterday so we gave my parents some cash and had them take our boys to the discount movie theater to see Yogi Bear.  Tickets at the discount movie theater cost $3 per person — much cheaper than Regal down the street where tickets cost $10 per person.  Who can afford to go to the movies at $10 each?


We started by having a glass of Sauvignon Republic to help us focus… since we don’t drink that much it actually made doing the taxes kinda fun.





By the time my parents came back home with the boys we were really hungry.  I had pre-heated the oven to 400 so that we could roast some asparagus, bell peppers, and sweet potatoes to go with the tofu.  We used olive oil, sea salt, and cracked pepper on the vegetables.





We had bread + cheese while the vegetables cooked.



It felt good to eat a healthy, simple dinner.
