What to do with tortillas? easy and economical quiches!
Got some tortillas lying around and don't know what to do with them? Turn them into delicious, easy and economical quiches! With just a few eggs, milk, a little mozzarella and bacon, you can make crunchy, ultra-gourmet mini-quiches. Perfect for an aperitif or a quick meal, these quiches can be prepared in no time at all. What's more, this recipe is adaptable: change the toppings as you wish, add vegetables or other fresh herbs for maximum flavor :-)

Preparation
- Fry the bacon until cooked.
Place tortillas on top of each other and cut into 6 pieces. - Beat eggs, milk, salt, pepper, garlic powder and chopped parsley.
- Add the bacon and grated mozzarella.
- Roll up tortilla pieces and place in greased muffin tin.
- Fill the mould cavities with the filling.
- Bake for 13 minutes at 350°F (180°C) (oven must be preheated).
- And now your mini tortilla quiches are ready!

What can I use instead of lardons?
You can use plain or smoked bacon, diced ham or smoked salmon, for example!
What can I use instead of grated mozzarella?
You can replace it with Emmental cheese or even grated Cheddar.
What can I use instead of tortillas?
You can replace wheat tortillas with corn tortillas.
How do I store these mini tortilla quiches?
You can keep them for up to 3 days in an airtight container in the fridge. You can also freeze them if you wish.
