With the nice weather, easy and healthy recipes are perfect for everyday meals. We bring you a quiche, this time in a square version with a very colorful decoration :) You can always modify it and add your favorite vegetables.

  • Spring carrot quiche - Preparation step 1In a bowl, whisk together the eggs, cream, milk, salt, pepper, and nutmeg.
  • Spring carrot quiche - Preparation step 2Add the grated carrots and mix well.
  • Spring carrot quiche - Preparation step 3Place the puff pastry in a greased 9x9 inches mold, trim the excess, and pour the carrot mixture on top.
  • Spring carrot quiche - Preparation step 4Bake for 30 minutes at 350°F (180°C). Remove from the oven.
  • Spring carrot quiche - Preparation step 5Place the sliced pepper and tomato on top of the quiche along with the olives. Bake again for 25 minutes at 350°F (180°C).
  • Spring carrot quiche - Preparation step 6Let it cool, and you're done! Serve with a salad for a complete meal :)

Observations

* If you want the base to be a bit crunchier, unmold the quiche once cooked, and put it back in the oven for 5 more minutes but only with heat from below.
