Mediterranean turkey burgers with roasted red pepper and herb mayonnaise

Ingredients:1.25 ground turkey
1/2 cup sundried tomatoes, chopped
2 cups fresh spinach, chopped
2-3 TB chopped Kalamata olives (if you aren't an olive fan, just omit)
1/2 small onion, minced
1 tsp greek seasoning
1/2 cup shredded mozzarella (you can use a more if you'd like, I am trying to cut back)
nonstick spray
salt and fresh ground pepper
whole wheat pita pockets, cut in half
Roasted Red Pepper and Herb Mayo
1/2 cup light mayo (I use Hellmans)
1 roasted red pepper from jar , chopped small
2 teaspoons fresh flat leaf parsley and oregano, chopped
1/4 tsp greek seasoning
Preparation:In large bowl, combine ground turkey, sundried tomatoes, spinach, olives, onion and seasoning. Gently combine. Add in cheese and gently combine. Form into 6 patties.
Spray both sides of each patty with nonstick spray and sprinkle with salt and pepper. Place on hot grill or grill pan and cook for approximately 5-6 minutes on each side or until done.
While burgers are cooking, place pitas on top rack of grill to warm up. Cut in half and open immediately after warming.
For mayo, combine all ingredients in bowl and mix well.
Serve with roasted red pepper and herb mayo in whole wheat pita pockets.
