Mutton kurma


- 1/2 kg Mutton,chopped
- 1 Medium sized tomato,chopped
- 2 Medium onions,sliced
- 1/2teaspoon Ginger paste
- 1teaspoon Garlic paste
- 1/2 teaspoon refined flour mixed with in 1/4 cup of water
- Salt to taste.

Spices needed:
- 2 Cloves
- 2 Cinnamon sticks
- 2 Green cardamom
- 4 Dry red chillies
- 2 teaspoons Coriander seeds
- 1/2 teaspoon oil


Step 1: To a pan on medium flame,pour 1/2 teaspoon oil.

Step 2: To this add the red chillies,coriander seeds,cloves,cardamoms and cinnamon sticks.

Step 3: Fry the above on low heat till the spices release their aroma.

Step 4: Remove from the pan and grind to a paste in the mixer.

Step 5: To a pan add the chopped mutton pieces and let them get roasted for about 3 to 5 minutes.

Step 6: The meat pores will close and seal in the moisture this way!!Once the mutton pieces are slightly roasted,add in the sliced onions and the garlic paste.

Step 7: Reduce to low heat till the onions are turn light yellow.
Add the spice paste now and mix well.

Step 8: Once you have done so,you may add the ginger paste and fry well.

Step 9: Finally add the tomatoes and salt to taste.

Step 10: Stir once or twice and cover and cook for 30 minutes till mutton is tender.

Step 11: Pour in the flour water ad simmer till the gravy thickens.

Step 12: Serve with rotis,Aapam.
