Ingredients:
5 potatoes
1 onion
1/3 cup peanuts
1/2" piece of ginger
1/2 tsp rai(mustard seeds)
2 dry red pepper (broken into halves)
1/2 tsp turmeric
1/2 tsp red chilly powder
2 tbsp olive oil
salt as per taste
1 tbsp chana dal(optional)
1/2 tbsp chopped cilantro

Method:
Boil,steam or microwave the potatoes until tender. Leave aside for 10 minutes to cool or run them under cold water for quick cooling. Slice onion and ginger(very thin sticks). Peel the potatoes when they are cooled and dice them.
Heat oil in a pan over medium heat. Add rai, red pepper pieces, peanuts and chana dal. Stir to prevent burning.
When you hear the spluttering sound from peanuts add sliced onion and turmeric powder. Saute for half a minute and then add ginger julienne. Finally add chilly powder and diced potatoes.
Stir until well combined and heated through. The whole preparation and cooking time will take less than 30 minutes.
transfer the potato sabji to a serving bowl and garnish with cilantro.
