- 2 cups cooked Basmati rice or Chinese Rice
- 1/2 each of green and red bellpeppers chopped lengthwise
- 1/2 cup parboiled carrot chopped lengthwise
- 1/2 cup parboiled beans chopped,
- 2 bunch Scallion/spring onions/green onion ,green and white part chopped separately
- 2 tablespoons garlic ,chopped
- 1 teaspoon grated ginger
- 2 tbsp Schezwan sauce,
- 1 teaspoon Dark Soya sauce(low sodium)
- 1/2 teaspoon White Distilled Vinegar
- Salt and crushed Black pepper to taste
- 1 tablespoon Sesame Oil

Schezwan/Sichuan Sauce:
- 15-18 whole dry Kashmiri red chillies, soaked in warm water for 30 minutes
- 10-15 crushed Garlic,1 teaspoon grated Ginger
- Scallion,white part-2 tablespoonschopped
- 1 tablespoon white vinegar
- 1 teaspoon sugar
- 1 tablespoon sesame oil(can use upto 5 tablespoons)
- Salt to taste,Water if required,as per consistency

Schezwan Paneer Dry:
- Homemade Chilli Paneer/Cottage Cheese,cut into cubes
- Schezwan Sauce-1 tablespoon or more, as per ur spice level
- Lemon Juice or Vinegar or Pineapple juice-1 tblsp,as required
- CornStarch-1 teaspoon
- Salt as per Taste
- Green bellpepper,Onion,squares and pineapple rounds
- Note-Be carefull while adding salt as sauce already hv salt.

Step 1: Wash and Soak rice for 1/2 hour and cook rice (it shld nt b mushy,the grains shld b fluffly and separate).

Step 2: Heat oil in the wok .Saute the Ginger,Garlic till the raw smell of ginger garlic goes off. Add white part of spring onion and saute for 30 secondes.

Step 3: Then add the Sliced and Chopped veggies. All the vegetables should be just crisp, and shld still hv there crunch.

Step 4: Now add the salt,crushed pepper,Schezwan sauce,Soy Sauce,Vinegar. Mix gently to incorporate the sauces with veggies and then add the cooked rice and saute well on high flame.

Step 5: Finally add the chopped green part of spring onions and mix well. Serve hot with any Chinese side dish.

Step 6: Schezwan/Sichuan Sauce:
Drain out all the water from the chillies and discard it. Grind to a fine paste and keep aside.
Heat Oil and add garlic and ginger. Saute for 1-2 minutes and scallion and saute fr another minute add chilli paste. Saute well til the chillies are cooked and raw smell goes off and the oil separates. Add vinegar,sugar and salt. Mix well, allow it to cool and store refrigerated in an air-tight container.

Step 7: Schezwan Paneer Dry:
Mix all the ingredients except paneer, bellpepper, onion and pineapple and apply to paneer pieces. keep aside for 15 minutes..Arrange Paneer pieces on Skewers with Onion, Bellpepper and Pineapple. Broil in Preheated oven for 10mins til all the sides are browned.
