In a medium bowl, whisk together the Chipotle rub mix, lime juice, brown sugar, garlic powder, sea salt, peanuts, and hazelnut or peanut oil. Marinate the chicken pieces for about 3 hours, or overnight.
Preheat the oven to 425°F/220°C. Line a large baking pan with parchment paper. Arrange the chicken pieces in the pan and bake for about 30 minutes.
Then set the oven on broil and bake the chicken for another 3 to 5 minutes, or until the chicken is fully cooked. Serve warm with some lime wedges.
