- Preheat the oven to 350°F. Coat a 4×8 inch loaf pan with butter to grease it.
- Sift together the dry ingredients. In a large mixing bowl, whisk the orange juice concentrate, bananas and eggs.
- Blend in the nuts, coconut and raisins. Add in the flour mixture until well mixed.
- Pour the mix into the greased loaf pan. Bake 45 minutes at 350°F. Check if the loaf is ready by inserting a toothpick after 35 minutes.
- If it comes out clean, it’s ready to be taken out of the oven.
- Immediately top the still hot bread with melted butter.
- Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.
