Ingredients:

Dry Ingredients :
- Whole Wheat Flour 2 cups
- Flax Seed Meal 1/2 cup
- Baking Powder 1 teaspoon
- Baking Soda 1/2 teaspoon
- Sea Salt 1/2 teaspoon

Wet Ingredients :
- Pom Juice 1 and 1/4 cup
- Canola Oil 1/2 cup
- Agave + Raw Agave Nectar 2 tablespoons+ 2 tablespoons
- Pear Fruit 1 finely diced

Garnish :
- Toasted Unsalted Cashews 1/4cup
- Butter/Ghee for greasing cake pan

Preparation:

Step 1:

Turn the oven to 350 F.While the oven is preheating let us get the cake batter ready. Grease a cake/loaf pan and keep it ready. In a bowl take 2 cups of whole wheat flour(atta flour).

Step 2:

Add baking powder , baking soda and salt and mix well or sift them together so that all the powders mix in well. Now add the flax meal to the above dry ingredients and mix well.

Step 3:

In an other bowl take oil , agave nectar and pom juice and mix them well with the hand mixer. Now pour the wet ingredients into the dry ingredients and blend with the hand mixer. To this batter add the finely diced pears and whisk one more time so that the fruit blends in.

Step 4:

Now pour this batter into the greased pan and top it with roasted unsalted cashews and place it in the oven and bake for 50 to 60 minutes.Each oven is different so check in between.

Step 5:

After 50 minutes test the cake with a tooth pick to see if it is done ,if not continue for few more minutes and check again. If the tooth pick comes out clean it's done.

Step 6:

Take the cake out of the oven and let it cool. It took more than 30 minutes for this cake loaf to cool down.
