Apple and cucumber salad

Ingredients:

2 apples - remove seeds and cubed into medium size pieces
1 (about 100g) cucumber - remove seeds and cubes into medium size pieces
100g lettuce leaves- shredded into pieces
50g dried black currants
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tsp brown sugar
salt to taste

Preparation:

Soak the cubed apples, cucumber and lettuce leaves in a bowl with ice cubes for about 10 mins for a crunchy effect.
Drain to remove excess water.
Into a mixing bowl, add the oil, lemon juice, sugar and salt.
Whisk for a couple of minutes and add the drained ingredients inside.
Toss to combine all and its done.

Yes, this is a grat recipe! The only change I made was I omitted the brown sugar and black currants as a family member is on the border of diabetes and has to avoid sugar.
