Spinach citrus salad

Ingredients:

People seem to think vegetables are for salad and fruit is a snack, the two should never meet. But joining the two is the best thing you can do!! This salad grabs your attention because there's no meat. It just gives the crispness of the spinach and tangyness of the fruit. Then that dressing is a combination of both! There's no meat because it's not needed. Meat is not always needed to make a dish appealing, and this salad is clearly a star on it own!! Always double this recipe because your guest will keep eating and eating, and before you know it, it's gone.

SALAD:
2 cups-spinach in a bag or fresh
1/2 pint of blackberries
1/2 cup-canned grapefruit slices(drained, reserve 2 TBSP liquid)
1/2 cup-canned madrin oranges(drained, reserve 2 TBSP liquid)
1 tomato, sliced
1/2 medium red onion, sliced
You can adjust these ingredients to your taste.

DRESSING:
1/2 pint of blackberries
1 TBSP-djion mustard
1/2 tsp-salt
2 TBSP-raspberry
1/4 cup-vegetable oil or olive oil( add more if needed)
1 to 2 TBSP-lemon juice or vinegar
Use the reserved liquid for the dressing.

Take a 1 pint of blackberries and use half for the salad and half for the dressing.
  Preparation:

When using fresh fruits and vegetables remember to wash before use.

Salad.....

1. Place the spinach on a plate.
2. Then arrange the blackberries on top.
3. Now put the onions on.
4. The tomatoes is next.
5. Dont forget the grapefruit and madrin oranges.
6. Leave it pretty like this or toss it!

Now For The Dressing.......

1. In a food processor, pulse together reserved fruit liquid, lemon juice, djion mustard, blackberries, salt, and preserves until smooth.
2. Pulse mixture while pouring the oil in. (If you can)
3. Strain the dressing through a fine sift to remove seeds.
4. Dress salad youself or let your guest do it themselves.

TIPS:
*Never dress a salad in advance. Even if you dress it lightly it will wilt.
*Only dress half of the salad before serving just in case you have leftovers.
*If you plan to take this salad to a party or something pack all the items in seperate containers and make right before serving.
*Never make a salad in advance either, it will be water by the time you want to each
* I never put a whole salad together I make it as I want to eat it.
*The dressing can be made in a blender, just combine everything, including oil, and blend until smooth.
