*Harvest Nugget Cookies (pumpkin chunkies)

Lately I've been up to my ears in pumpkin goods, although we did not go pumpkin picking this year I happen to have a freezer stocked full with pumpkin that I roasted and pureed last year. (its what happens when you let a six year old pick out the eating pumpkin... doesn't every momma need a 15 pound squash?) So recently Riley needed pumpkin goods for school and I could not have been more thrilled to shovel off some of the pumpkin. Not that I don't just live for an excuse to bake in general, but pumpkin especially is somewhat rare around here, Stephen does not like it. I wouldn't say he hates it per say, but... ok yeah he hates it. We'll just politely call him a freak and go about our business. 


Although doodle was already through his second or third pumpkin pie of the season (I'll attempt to do those recipes justice later) I had to somehow convince him that he didn't want to bring a pumpkin pie to school. One: I'd have to get it there and that just sounded like a pain, Two: everyone thinks pumpkin they think pumpkin pie and I'm sure that there would be a hand full of store bought pies. I dare not send yet another one to be forgotten amongst the sea of of un-inspired pies. The outcome? Well we settled on cookies, I thought pumpkin whoopie pies, they are probably my favorite pumpkin treat, the only thing better is pumpkin cinnamon rolls maybe? Well anyway I thought about it for a minute and then I realized they're kind of messy, and uber sugary, more sugary than these even. I would not want to be locked in a room filled with 30 first graders bouncing off the walls from a sugar high. So it was a community service if you will? I've been on a mission to find pumpkin cookies that are crisp and chewy like a chocolate chip cookie however I've not succeeded in finding one yet. I opted for these cakey moist cookies that are packed with raisins, chocolate chips and oats. Perfectly pumpkiny but not overwhelming, the fruit, chocolate and oats add just the right amount of Hmm...that keeps it interesting and also adds some nutrition to the party! Not revolutionary but I'd like to think they're at least a little unique, I know that they're delicious no less! 


Harvest Nugget cookies: 

Chunky pumpkin cookies with dried fruit, chocolate chips and oats. Dried dates, figs, cranberries or blueberries would be nice, adding walnuts or pecans would also be great, however if your baking for a bake sale or school function theres always allergies to consider.

dry ingredients:
2 1/4 cup un-bleached all purpose flour
2 teaspoons baking powder
1 teaspoon salt 
3 teaspoons pumpkin pie spice, I used about 2 teaspoons cinnamon, with a teaspoon of misc. spices clove, nutmeg, allspice etc. 

wet ingredients:
3/4 cup butter (soft or melted work fine)
1 1/4 cup brown sugar
1 cup sugar
2 teaspoons vanilla 
2 eggs
1 cup pumpkin puree

Mix ins:
1 cup rolled oats
1 1/2 cups chocolate chips
3/4 cups raisins or other dried fruit

Preheat oven to 350 degrees. 
Prepare a cookie sheet with a silicone baking mat or parchment.

In a large bowl whisk together or sift together dry ingredients. Mix wet ingredients together, you can cream together softened butter with sugar and then add one egg at a time however I've found that this recipe is very forgiving you really could just mix and dump everything. Gently stir wet mixture into dry mixture. Once combined and smooth stir in the "mix in" ingredients. Using a cookie disher dollop equal portions onto a lined baking sheet. Place each cookie about 1" apart. They will not spread too much. This is a cakey wet batter, you will want the sheets lined.

Bake on the middle rack 10-12 minutes or until the edges become golden. If doing multiple sheets at the same time rotate them half way. Allow to cool most of the way before removing from the pan. 


This is what a freezer package of pumpkin puree looks like. You simply clean out the pumpkin, cut it into chunks and roast it for about an hour. Puree until smooth and package into containers or bags. You can strain the mixture through a sieve lined with cheese cloth, this will allow you a more consistent texture closer to what you'd get in the can.

And yes I have to scribble on everything. It makes it happier pumpkin puree?
