ANZAC Biscuits
I baked ANZACS because I have all the ingredients ready in my kitchen and it doesn't need the electric mixer. After baking then I found out from internet the meaning of ANZAC biscuits. It was associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I, the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. The biscuit mixture was too sticky to handle, I wrapped and placed it in freezer for 15 mins. Recipe adapted from The Australian Women's Weekly: Cupcakes & Cookies Ingredients: 90g rolled oats 150g plain flour 220g firmly packed brown sugar (I used 150g) 40g desiccated coconut 125g butter 2 tbsp golden syrup 1 tbsp water 1/2 tsp bicarbonate of soda (I omitted it) Steps: 1. Preheat oven to 160C. Place baking paper on tray. 2. Combine oats, sifted flour, sugar and coconut in bowl. 3. Stir butter, syrup and the water in small saucepan over low heat until smooth; stir in soda (I omitted it). Stir syrup mixture into dry ingredients. 4. Roll level tablespoons of mixture into balls; place about 5 cm apart on trays, flatten slightly. 5. Bake about 20 mins; cool on trays.
