- In a pot, melt the butter, and cook the minced onion in it.
- Then, add the peeled and diced zucchinis, and cook them for around 5 minutes.
- Add water, stock cube, salt, pepper, cover and leave simmer at medium heat for 15 minutes.
- Put the vegetables with some cooking water in a blender, and add the 2 Kiri cheeses. Blend and add some cooking water if needed.
- There you are, your zucchini velvet soup is ready !
