Bottle Collectors and Muffin Making

What a fun day we had today! I started it out with a fruity bowl of hot cereal; 100_6296

This was so filling that I actually threw out the last few bites. I just couldn?t do it! As soon as we were done eating we took off to the bottle fund raiser for DS?s hockey team. What a blast that was! The boys collected enough glass liquor/beer bottles and beer cans to fill up 4 pick up trucks and a trailer. I?m sure it helped that we concentrated on the part of town where the bulk of university students live! :D Here?s a few shots from the day that my hubby took with his camera phone; media1

These 2 pictures were taken from one of the student residences. They apparently had a massive party last night and the boys let us all in to clear up the empties. There were so many that it took us 15 minutes to clear it all out. The kids and some parents passed everything through the window to waiting parents. You can just see me in the right side of the window?. This was by far the most fun place we hit up!! Here?s all the boys in the back of one of the pick up trucks; media6

It?ll be interesting to see how much $$ we collected! I?ll be sure to post the amount once I find out!

By the time we got home for lunch it was 2:30 and we were all STARVING! I threw together a sandwich of toasted WW soy bread, pepper jack cheese and a 1/4 cup of eggbeaters. On the side was the end of the buttercup squash from last night with some cinnamon sprinkled on. 100_6297

Then I downed a dark mocha almond Kashi bar;

After resting for a few minutes, I got started on some muffin making for the week. I made some Mini Maple Chocolate Chip Pancakes muffins; 100_6302

Instead of a 1/2 cup of chocolate chips I used a 1/3 cup of cinnamon chips and set 2 carob chips a top each one. The second batch I made was Zucchini Nut Muffins; 100_6303

I kinda made a big swap in this recipe. I had no zucchini so I used butternut squash instead. And no Splenda, as usual. Agave is my sub for that. I haven?t tasted these yet, but they smell fabulous!

I cleaned up while these were baking and then I finished cleaning and chopping the butternut squash. It was the one from my garden that DD picked early and I?m happy to report that it was beautiful. Check out the orange hue it had; 100_6300

I cut the bulb into chunks for steaming this week and the long part became fries for the week as well; 100_6301

These are just hanging out in the fridge waiting to be roasted up! Next up was tomato picking. I gathered a full 15 x 11 cookie sheet of them! 100_6304

I picked fresh basil and parsley at my Mom?s place tonight and I plan to make a huge batch of marinara sometime this week.

Supper was later than usual and light. I ate a SOL veggie burger with ketchup, Dijon, relish and a LC cheese wedge; 100_6305

There was also a piece of Juicy Jumbo hotdog that I decided to eat. They?re not nearly as good as I remember! I had a few of the mini muffins as a sweet end. Yum.

It?s pushing 9pm now and although I have lunches made, there?s still a few things that need to get done before I can sit down. This day passed by so fast?.I could use another few hours! I hope you all had a great Sunday?
