Fish is one of those ingredients that can completely transform thanks to a good marinade. With just a few ingredients, the right balance of acidity and aromatics, and the correct resting time, you can turn a simple fillet into something far more flavorful, fragrant, and juicy.
I use marinades constantly now, especially when I want to give lunches or dinners a little more personality without overcomplicating things. These are the marinades that are genuinely worth trying at least once.
Citrus and honey marinade
Fresh, fragrant, and slightly sweet, this marinade is perfect for giving fish a light, summery flavor. During cooking, it creates a delicate caramelized finish that’s honestly hard to resist.
Ingredients for about 1.3 lb (600 g) of fish
- Juice of 1 orange
- Juice of 1 lemon
- 3 tablespoons extra virgin olive oil
- 1 teaspoon honey
- Black pepper to taste
- Zest of half a lemon
How to marinate the fish:
Mix all the ingredients in a bowl until you get a smooth emulsion. Pour the marinade over the fish and gently massage it across the surface. Cover and refrigerate.
Marinating time:
About 30 minutes.
