Clean Detox Recipes: Ground Turkey Meatloaf
We made it though another year, 2010 is gone and 2011 is now upon us – congratulate yourself! That being said, with the coming of a new year usually comes a slew of resolutions. I don’t know about you, but I pretty much gave up the whole resolution thing a long time ago. Too much stress, too many disappointments to start out the new year and usually something that I either don’t need to do or could never do even with my over achieving ways. So good riddance! But, after having successfully completed a clean detox back in the Fall of ’09 (and then subsequently completed mini cleanses since then), I thought the start of the new year would be a great time to do a full on clean detox again. Of course, doing the occasional cleanse is a good thing but after a month of eating things like bourbon peanut butter cups, bacon peanut brittle and spiced ginger caramel sauce leaves you feeling a little sluggish, it’s more like mandatory. The one thing that’s usually wrong with cleanses, or the thing that makes most people quit a cleanse, is the lack of food. One can not live on water, lemon, maple syrup and cayenne pepper for very long. I know, without food, I turn into a raving bitch lunatic…so my cleanse has to include food. Even though the program that I follow includes actual food, there’s not enough variety of clean detox recipes for my liking. Of course, that might also just be my problem with feeling confined if I don’t have enough choices (paging Dr. Phil). Back in 2009 I started creating clean eating recipes that not only worked with the program, but tasted good too. The taste was paramount since Craig wasn’t doing the cleanse with me and I wasn’t going to cook two different meals for us. So far, he’s liked all of the clean recipes that I’ve cooked for him. It’s much easier if your partner is doing the program with you, but as long as they are supporting you (which is much easier if they are eating and enjoying the same food as you) that makes sticking to the program much easier. So today is day one and I thought I would start off with something simple, warm and comforting – ground turkey meatloaf. Okay, I can hear you saying “bleh.” But don’t knock it ’til you try it. There’s a couple of different twists to this recipe. The first is the addition of amaranth (in place of bread crumbs) and ground flax meal (in place of eggs). The clean program that I follow calls for the elimination of bread (wheat) and eggs from the diet. Amaranth, a grain related to quinoa, has excellent absorbing qualities so it’s a wonderful addition to clean detox recipes. When cooked, amaranth doesn’t have quite the same consistency as most grains either, it’s not a grain with crunch, it’s fairly mushy when cooked so it works well in the turkey meatloaf. What’s meatloaf without a tangy topping? This tropical and tangy topping is definitely something to add to your clean recipes, or regular recipes for that matter. It’s bright tropical sweet and sour flavor is the perfect accompaniment to the meatloaf but would also be perfect served over halibut or another white fish. ![]() My Man's Belly Ground Turkey Meatloaf Recipe Makes 1 9″ x 5″ loaf Ingredients 1 Pound Ground Turkey 1/2 Cup Amaranth 1 Tablespoon Flax Meal (mixed with 2 tablespoons of water and set aside for 5 minutes)* 1/2 Cup Chicken Broth 2 Carrots (chopped fine) 1 Celery Stalk (chopped fine) 1 Small Apple (grated) 1 Small Onion (peeled and grated) 2 Cloves Garlic (minced) 1 Tablespoon Brown Mustard 2 Teaspoons Olive Oil 1 Teaspoon Dried Thyme Sea Salt (to taste) Fresh Ground Black Pepper (to taste) Directions Preheat oven to 350 degrees Farenheit. In a large bowl, add all ingredients and mix thoroughly. Lightly oil a 9″ x 5″ loaf pan with olive oil. Pour turkey mixture into loaf pan and make sure that it is level. Bake for 1 hour. Meatloaf will pull away from sides when it is done. Remove from oven and let sit for 15 – 20 minutes to allow the moisture to be re-absorbed back into the meatloaf. Pineapple Sauce Recipe Makes 3/4 cup of sauce Ingredients 3/4 Pound Fresh Pineapple (or canned with water – chopped small) 1 Small Red Onion (chopped small) 2 Tablespoons Lime Juice 1 1 inch piece of fresh ginger (grated) 1 Tablespoon Brown Rice Syrup Sea Salt (to taste) Fresh Ground Black Pepper (to taste) Directions In a 2 quart saucepan, over medium high heat add all of the ingredients. Stir occasionally as ingredients heat up and pineapple begins to break down. Continue cooking until liquids almost disappear. Using a stick blender (or regular blender) puree ingredients until a slightly chunky consistency is achieved. Serve slices of meatloaf with pineapple sauce spooned over the top. *Flax meal, when turned into a paste with water, is an excellent substitute for egg in this dish. related searches : Clean
