Coriander Rice / Kothimira Annam / Cilantro Rice
Ingredients:- Rice - 2 cups Coriander Leaves-1 bunch Bay Leaves-4 nos Cardamoms-4 nos Cinnamon Sticks-4 nos Cloves- 4 nos Peanuts -3/4 cup (u can add more or less) Green Chillies- 5 nos Salt to taste Oil- 4 to 5 tbsp Water-4 cups Method:- First wash and finely chopped the coriander leaves. Keep it aside.Cut the green chillies. ![]() Heat oil in a pressure cooker.Add bay leaves,cloves,cinnamon,cardamom,green chillies fry for a few seconds. Now wash the rice add to the cooker and fry for 5 minutes. ![]() ![]() Now add the water and salt to it mix well.Close the lid and pressure cook for 3 whistles. ![]() ![]() ![]() Now another pan add oil fry the peanuts till it golden color.Keep it aside. ![]() Now in the same pan add the chopped coriander leaves stir fry for 3 to 4 minutes( till the water is evaporated). Keep it aside. ![]() ![]() ![]() When rice done remove the lid Take out the green chillies and all the spices. ![]() ![]() Now add the roasted and fried coriander leaves to the rice mix everything well. ![]() ![]() ![]() Cover the lid for 15 to 20 minutes cook it in simmer.(Do not put whistle). After 20 minutes open the lid mix everything well .Switch of the flame. ![]() Serve hot with raita or any gravy. ![]() related searches : Coriander
