How A Good Massage Leads to Less TV and a Fresh Salad.
For quite some time now, I have been attempting to talk about fresh salads with the same aplomb as say... fried onion rings and a cold beer. This has been a difficult task considering I've never once admitted, "I live in my bathing suit" or "water makes me full." Is it me, or do salad lovers frequently say those things? As I thought more closely about the looming BIG day in 2 weeks (cue Canon in D sound bite), I became more eager to try this very cool salad involving "massaging" the leaves of kale. I'm so glad I did, impending wedding or not! This salad was flavorful, filling, yet light! The combination of vegetables, fruit and the creaminess of the avocado felt like I was splurging, rather than limiting anything. Plus, kale is quite the super food, and had me feeling energized enough to skip the Dancing With The Stars elimination episode and take the pup on a leisurely, evening stroll. I have to ask you all, is there a salad out there that you feel is genuinely satisfying? Also, have you tried massaging any or your vegetables to bring out the flavors? The massaging queen! Massaged Kale Salad with Beets, Granny Apples and Cucumbers Serves 4 1 bunch kale, coarsely chopped 1 ripe avocado, chopped 1/2 tsp sea salt 1 1/2 T olive oil 1 lemon, juiced 1 tsp brown rice syrup 5-6 beets, sliced 1 cucumber, finely diced 1 Granny Smith apple, sliced ¼ cup raw sunflower seeds pepper to taste Method: Place chopped kale into a large bowl with avocado, salt, olive oil, lemon juice and brown rice syrup. Massage kale for 3-4 minutes with hands. The kale will turn a deeper hue of green, and will become less coarse. Add beets, cucumber, apples, and sunflower seeds and toss gently. Add pepper to taste. Serve chilled.
