Idlis-Steamed Rice Dumplings

Ingredients



4 Cups parboiled rice



3/4 to 1 Cup split black gram



A pinch of salt



To make the batter:



Soak the parboiled rice and split black gram seperately for 4 to 5 hours...Adding a little water,grind the soaked gram in to a smooth batter in a mixer or a grinder...Similarly,grind the rice..Mix the gram and rice pastes together...Add a pinch of salt and cover....Keep aside to ferment for 10 to 12 hours(preferably overnight)....



To make idlis:



Add a little water to the fermented batter to get a thick pouring consistency....Grease the moulds of an idli stand and pour a ladleful of batter in to each of them...Stack 3 to 4 racks and steam in a idli cooker for 7 to 10 minutes...Take the idli stand out and let it cool before removing the idlis....



Serve hot with green chutney,mint and coriander chutney or sambar...
