The cooking bug bit me tonight.


Nothing fancy, but we had some chicken breast tenderloins in the fridge that needed to be cooked, so being the improviser that I am, I searched my mother?s Junior League Come On In cookbook for an easy (but fun) recipe. (How southern of me!) :)


I won?t reprint the recipe, since I?m fairly sure that?s plagiarizing, but it involved mixing up some paprika, oregano, garlic powder, and pepper and rubbing it on the chicken strips.


I pour ~about a tbsp of olive oil in the pan, and sautéed away!

Mmmm?and I added some mushrooms + lemon juice whilst cooking:

I made a side salad while the chicken cooked.

And served up a few strips with broccoli and a baked sweet potato also:

The difference between actually baking a potato over just microwaving is incredible. That?s all I have to say about that.


Well, I?m planning on a 9:15 am spin class in the morning, followed by helping my mom with some Christmas errands in the afternoon. Big Monday ahead ;)
